Mince Meat

Makes 9 quarts

Ingredients

  • 3 pounds lean ground beef
  • 1 pound ground suet
  • 12 pounds chopped apples
  • 1 pound seeded raisins
  • 2 pounds seedless raisins
  • 1 quart canned cherries
  • 1 glass of tart jelly
  • 4 cups white sugar
  • 2 cups brown sugar
  • 2 cups molasses or cooking syrup
  • Juice of 3 lemons and grated rind of 1
  • Juice of 3 oranges and grated rind of 1
  • 1 cup sliced citron
  • 2 Tablespoons cinnamon
  • 1 Tablespoon cloves
  • 2 teaspoons salt
  • 1 pint vinegar

Directions

Cover ground meat and suet with boiling water and cook until tender

Add the remaining ingredients and simmer one hour, stirring from time to time

Store in a cool place, or can in hot sterilized jars
